Grilled Lemon Herb Salmon with Asparagus

  • Ingredients:
    • 2 wild salmon fillets
    • 2 tbsp olive oil
    • Juice and zest of 1 lemon
    • 2 garlic cloves, minced
    • 1 tsp fresh thyme (or dried)
    • Salt and pepper to taste
    • 1 bunch asparagus, trimmed
  • Instructions:
    1. Preheat grill or oven to 375°F.
    2. Mix olive oil, lemon juice/zest, garlic, thyme, salt, and pepper. Marinate salmon for 20 minutes.
    3. Toss asparagus with olive oil, salt, and pepper.
    4. Grill or bake salmon and asparagus for 12–15 minutes.
    5. Serve hot with a fresh lemon wedge.
