Roasted Garlic Black Cod

Roasted Garlic Black Cod with Summer Salad and Dijon Green Beans

This meal is so simple and so delicious! It was created to created to utilize the fresh bounty of summer veggies from the farmer's market.

Roasted Garlic Black Cod
 
4 Sena Sea Black Cod portions 
1 Garlic bulb (crush each clove)
1/4 cup soy sauce
1 Tablespoon olive oil
Rinse and defrost Black Cod portions. Marinate in soy sauce for 20 min. While marinating, heat olive oil and crushed garlic, stir frequently until softened but not too brown. Cover Black Cod with garlic, and bake for 25 min at 450 degrees. Broil until brown on top (about 2 min).
 
Summer Salad
 
2 large tomatoes
1 large cucumber
1 white onion
1 sprig of fresh basil
2 Tablespoons vinaigrette dressing
Cut all veggies in even sizes and coat with vinaigrette dressing. Coarsely chop basil and sprinkle on top of salad. 
 
Dijon Green Beans 
2 large handfuls of green beans
1 Tablespoon olive oil
1 teaspoon dijon mustard
Salt to taste
Boil or steam green beans for about 5-10 minutes. Drain and coat with olive oil and dijon, salt to taste.
