One-sheet Salmon Patties with Balsamic Cauliflower

 

This meal is as easy as fish sticks...but waaaay better! I love one-sheet meals for busy weeknight dinners, and this one doesn't sacrifice taste. Prep time is less than 5 minutes because you cook it frozen. If you think your family doesn't like salmon or cauliflower, try this!


Ingredients:

  • 2 cups frozen cauliflower (or other veggies)
  • 1/4 cup olive oil
  • 2 Tbs balsamic vinegar
  • 1 garlic clove (minced)
  • 1/2 tsp salt

 

Instructions:

Preheat oven to 425. 

Cover baking sheet with parchment paper for easy cleanup. Place frozen patties on baking sheet next to frozen vegetables.

Whisk together remaining ingredients to create balsamic glaze. Drizzle over veggies. 

Bake for 20 min (145 F internal temp).
