Ingredients
- 4 to 6 wooden skewers
- ¼ cup bottled teriyaki sauce
- 2 tablespoons vegetable oil
- 2 teaspoons finely minced fresh ginger
- 12 Alaska spot prawns, peeled, tail on
Preparation
-
Step 1. Prepare the skewers
Prior to grilling, soak wooden skewers in water for at least 30 minutes.
-
Step 2. Shell the prawns
Thaw the frozen prawns in cold water before peeling. Keep the prawns in ice water while you are peeling.
1. Grip the body of the prawn in one hand and twist off the head with the other
2. Turn the prawn over and, using your thumb, pull the shell open along the length of the belly, working from the head along to the tail. Removing the segments of shell as you go.
3. You can keep the tail on or pull it off by gently pinching the tail shell and easing the rest of the prawn away.4. It is safe to eat the black vein, or you can remove it. Using a small sharp knife, cut along the back of the prawn alongside the intestinal tract, then gently lift it out using the tip of the knife.
-
Step 3. Glaze the prawns
In a small bowl, mix the ginger, teriyaki sauce, and vegetable oil. Skewer Alaska prawns, piercing through both the top and tail sections of each shrimp. Brush prawns with the glaze and place each skewer on a tray to rest for 30 minutes.
-
Step 3. Grill the prawns
Preheat grill or broiler/oven to medium-high heat. Coat grill or broiler pan with cooking spray. Cover and grill each skewer for 3-4 minutes per side. Cook just until prawns turn pink and are opaque throughout.
