When schedules pick up and life gets loud, I really feel it. Between work, family, activities, and the general pace of everyday life, evenings can get hectic fast. And knowing this, I prepare the best way I know how: I make a big batch of pesto.
Yes, pesto.
Here’s the thing—during our busiest seasons, the simple act of sitting down to eat together can be one of the most grounding parts of the day. It doesn’t always happen (we’re all human), but when it does, it makes a noticeable difference.
Enter the pesto strategy.
On chaotic nights, I can toss it with pasta and dinner is done. When I have a little more breathing room, I’ll marinate chicken or salmon ahead of time and throw it on the grill. Simple, comforting food that helps the evening feel calmer and more connected.
And that’s the idea: even when life is full, dinner doesn’t have to disappear.
I’ll share my go-to pesto recipe soon, but in the meantime, I’m curious…
On the nights you don’t cook, what’s the biggest thing that gets in the way?
-
Don’t know what to make
-
Didn’t plan ahead
-
Didn’t get to the store
-
No time to cook
-
Something else?
