Sweet & Savory Baked Copper River Salmon

Copper River salmon has a short season and a big reputation, and once you've had it, you'll understand why chefs and home cooks alike wait all year for it to show up. Rich, buttery, and packed with flavor thanks to the long swim upstream, this salmon doesn't need much dressing up. But a little sweet-meets-savory glaze? That's where the magic happens.

This baked salmon recipe pairs the natural richness of the fish with a glaze that balances brown sugar sweetness against a savory, umami-forward kick...think soy sauce, garlic, and a touch of ginger doing the heavy lifting. It comes together in one pan, bakes in under 20 minutes, and turns out perfectly flaky every single time.

Whether you're cooking for a weeknight dinner or trying to impress guests without breaking a sweat, this is the kind of recipe that makes you look like you know exactly what you're doing in the kitchen (even if tonight's the first time you've cracked open a bottle of soy sauce all week).

 

Sweet & Savory Copper River Wild-Caught Salmon
Serves 4. Recipe by Peggy Fiandaca, salmon from Sena Sea

Ingredients -
4 skin-on center-cut wild-caught salmon, 6 oz portions. 

Ingredients –
2 tablespoons light brown sugar
½ teaspoon Hungarian paprika (or any good paprika)
2 cloves of garlic grated with a rasp (or finely chopped)
¼ teaspoon of cayenne pepper (or more if you like the heat)
¼ cup of Panko breadcrumbs
½ cup of Italian parsley, chopped
2 tablespoons butter, melted
1 fresh lemon, squeezed and zested; reserve zest to garnish
1 tablespoon Dijon mustard
Kosher salt and a generous amount of fresh cracked pepper for seasoning

Directions -

  1. Preheat the oven to 425 degrees F.

  2. Line a baking sheet with foil and crimp the edges to create a border around the salmon to collect the juices.

  3. Make the topping: Mix brown sugar, paprika, garlic, cayenne pepper, breadcrumbs, parsley, butter, fresh lemon, salt, and pepper.

  4. Spread Dijon mustard on the flesh side of each salmon. Then add the topping mixture and press down to adhere to the salmon.

  5. Put salmon skin side down on the foil-lined baking sheet.

  6. Bake until the breadcrumbs are golden brown and the salmon is firm and flakes easily when pressed, about 10 minutes.

  7. Sprinkle lemon zest to garnish. Serve hot alongside lemon orzo.

Wine Pairing - A crisp, slightly dry Riesling or a light Pinot Noir. The Riesling's touch of sweetness plays beautifully against the glaze's savory edge, while a chilled Pinot Noir brings just enough acidity and red fruit to stand up to the richness of the salmon without overpowering it.
