Poached White Fish: Acqua pazza 

 

Acqua pazza — Italian for "crazy water" — is the kind of dish that makes you question everything you thought you knew about cooking. Tomatoes, garlic, white wine, and a pinch of crushed red pepper have absolutely no business tasting this good together. And yet. The broth is spicy, bright, and deeply savory. The fish poaches gently right in the pan. The whole thing comes together in about ten minutes. It's simple in the most show-off way possible.
