Grilled Lingcod Pesto

It's grilling season, and lingcod is ready for its moment. Mild, sweet, and firm enough to hold its own on the grate, it takes on smoke beautifully without losing that clean, delicate flavor wild-caught Alaskan fish is known for. Quick and easy but oh so delicious...this is one you'll keep coming back to all summer long.

Ingredients

  • 2 Sena Sea Lingcod portions (8 oz. each), thawed
  • 1/2 cup pesto, store bought or make your own
  • 1 tsp salt

Directions

Preheat grill to medium-high (about 400°F) and oil the grates well.

Salt the flesh side of each lingcod fillet. Place skin side down directly on the grill, close the lid, and cook for 6-8 minutes until the skin releases easily and the fish is opaque about halfway up.

Spread a generous amount of pesto on top of each fillet, close the lid, and cook another 3-5 minutes until the fish flakes easily with a fork.
