
Grilled Lingcod Pesto
It's grilling season, and lingcod is ready for its moment. Mild, sweet, and firm enough to hold its own on the grate, it takes on smoke beautifully without losing that clean, delicate flavor wild-caught Alaskan fish is known for. Quick and easy but oh so delicious...this is one you'll keep coming back to all summer long.
Ingredients
- 2 Sena Sea Lingcod portions (8 oz. each), thawed
- 1/4 cup pesto, store bought or make your own
- 1 tsp salt
- 1/2 lemon
Directions
Preheat grill to medium-high (about 350-400°F) and oil the grates well.
Salt the flesh side of each lingcod fillet.
Just before grilling, squeeze the juice from half a lemon directly onto fish and coat the flesh side with pesto.
Place skin-side down directly on the grill (even if it's been skinned), close the lid, and cook for 9-14 minutes until the fish releases easily and the center is opaque. No need to flip!
