It’s back-to-school season, and wow—I’m really feeling it!
I have a middle, high school and college student and they all went back to school last week. I knew it would be crazy, so I prepped the best way I know how: I made a big batch of pesto.
Yes, pesto.
Here’s the thing—even during the busiest weeks (and especially during big transitions), sitting down to eat together is the most grounding thing we can do. It doesn’t always happen, but when it does, it makes a huge difference.
Hence the pesto. On the craziest nights, I can toss it with pasta, or if I have a little more time, marinate chicken ahead. The night before we dropped our son at college, I grilled Coho with pesto—a simple meal that was a delicious send-off.
So, here’s my thought: back-to-school season can also be back-to-dinner season.
