Copper River sockeye, LOX
Copper River sockeye salmon is world-renowned for its bold salmon flavor. Because the Copper River is so swift, these fish must store extra fat and oils to survive the long trip. This high fat and oil content is why Copper River salmon are recognized as some of the world's best-eating salmon. This fat content delivers heart-healthy Omega 3’s and gives the sockeye a bold flavor with a delicate and firm texture.
We select the highest quality fish for smoking and deliver it to a custom smokehouse. The salmon is hand-cut into portions, cured in light salt brine, and slowly cold-smoked over pure, natural alder wood.
Wild Alaskan Copper River sockeye lox. Cold smoked salmon, also known as Nova Smoked lox (or just lox), is sliced thin with a silky, buttery texture. The cold smoking process cures the meat and adds a more complex smokey, and salty flavor. It pairs perfectly with a bagel and cream cheese.

We use sustainable green cell foam to insulate our frozen boxes instead of styrofoam. A combination of pellet dry ice and booster packs (pcm gel packs that hold below freezing) are used to keep fish frozen during transit.
Smoked salmon jars are shipped separately from frozen products because the glass could break due to the very low freezing temperature of dry ice.
